Jam making time

If it's time to pick raspberries then it must be time to make jam.  Yet again I'm using the very simple and easy recipe given to me by my friend Anne when I worked at the doctors.

2 1/2lbs Raspberries
3lbs Granulated sugar
Slowly bring the raspberries to the boil. Once boiling, boil rapidly for 5 minutes. Remove from heat and add the sugar.

Stir slowly until all the sugar has dissolved.
Bring back to the boil and boil rapidly for 1 minute. (Temperature should be 104 degrees C)
Skim the mixture and spoon into warmed jam jars.
This amount of raspberries and sugar makes approx 6 jars of jam.

  7. These look lovely. I think raspberry jam is my favourite, I've never tried making it though. The only jam I've ever made is chilli jam which is a type of relish (recipe courtesy of Nigella). I've emailed the chocolate ginger cake recipe to you, hope I sent it to the right address!
