Spicy Carrot Soup

This is such an easy recipe to make and tastes delicious.

Spicy Carrot Soup

Serves 6 


1.  6-8 medium carrots, peeled and sliced
2.  1 medium onion, chopped
3.  2-2 1/2 Pints of Veg Stock
4.  1 tsp ground coriander
5.  1 tsp ground cumin
6.  1 tsp of chilli powder
7.  1 tbsp of vegetable oil
8.  Salt and pepper to taste


1.  Peel and slice carrots, peel and finely chop onion 
2.  Heat oil, and add the carrot and onion, cook until slightly            softened-about 5 minutes
3.  Add spices and stir until carrot and onion are covered with spices
4.  Add vegetable stock, bring to boil and then simmer for about 15/20 minutes until the carrots are soft
5.  Leave to cool, once cool, blend until smooth
6.  Add more stock if the soup is a bit thick, adding seasoning and more chilli, if you require more of a chilli kick.
